Great Gingery Raita

Mild cold had taken over me and Prasoon was healing me with the ancient Indian herbs of ginger water mixed with honey. He would smush the ginger and then pass it through a muslin cloth to get the water…all the left over’s after squeezing out the nectar were used as a dressing…Shocked!! Read On!!

1 liter Curd
250 gms  or 2 medium sized Cucumber
250 gms or 4-5 tomatoes Tomatoes
2 big Green Peppers
2 Green chillies
1 tsp Roasted Cumin Seeds
2 tbsp sugar preferably powdered
Salt to taste

Cut the Cucumber in your favorite shape evenly, apply the same treatment to the veggies. Mix all the above ingredients and add the ginger remains. It serves 6 people and you can’t stop gravitating towards it…
